Preservatives

Preservatives are substances or additives used in food, cosmetics, pharmaceuticals, and various other products to prevent spoilage, decay, or deterioration caused by microbial growth, oxidation, or other chemical reactions. They help extend the shelf life of products, maintain their quality, and ensure they remain safe for consumption or use.

There are several types of preservatives, including:

Antimicrobial Preservatives

These inhibit the growth of bacteria, yeasts, molds, and other microorganisms. Common antimicrobial preservatives include sodium benzoate, potassium sorbate, and parabens.

Antioxidants

Antioxidants prevent or slow down the oxidative degradation of products, which can lead to rancidity or color changes. Examples include vitamin E (tocopherol) and ascorbic acid (vitamin C).

Chelating Agents

Chelating agents bind to metal ions, such as iron and copper, which can catalyse reactions that lead to product degradation. Ethylenediaminetetraacetic acid (EDTA) is a common chelating agent.

Natural Preservatives

Some natural substances, like salt, sugar, vinegar, and certain spices, have preservative properties. These have been used for centuries to preserve food.

Chemical Preservatives

These are synthetic compounds developed specifically for preservation purposes. Examples include sodium nitrite (used in curing meats) and butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT).
